GOTTA HAVE CHOCCA-CHIP COOKIES

INGREDIENTS

1 1/2 cups all-purpose flour *
1 tsp baking soda
1 tsp ground cinnamon - optional
1/2 tsp sea salt
2 1/2 tbsp cocoa *
1 cup unsalted butter - room temperature
1/4 cup granulated sugar *
2 large eggs - room temperature *
2 tsp vanilla
3 cups rolled oats *
2 cups semi-sweet chocolate chips

INSTRUCTIONS

  1. In a medium bowl mix first 5 ingredients, set aside. In your electric mixer bowl, beat butter and sugar on med-high speed until pale and fluffy, approx. 3 minutes.

  2. Add eggs one at a time, thoroughly mixing. Beat on high for 1 minute. Add in vanilla

  3. With mixer on low add dry ingredients, mix until well combined. Add oats and chocolate chips, mix until combined

  4. For best results refrigerate for at least an hour.

  5. Preheat oven to 350 F. Drop rounded tablespoons onto a lined cookie sheets with parchment - these will spread a bit.

  6. Bake for 10-12 minutes or until edges are lightly browned but centre is still soft and unset.

  7. Cool for 5 minutes on the baking sheet then transfer to cooling rack to cool completely.

  8. Enjoy!
