EASY CHEESY QUICHES

Quiche is custard made luscious with the addition of cheeses and veggies. Traditionally, the crust is homemade but frozen pre-made crusts shorten prep time. Quiches can be made exactly to suit your family or guests for any meal, and even made ahead. Three general rules: 1) One-part egg to two parts liquid dairy. (IE: 2 large eggs + 1 cup of milk) 2) Always beat the mixture until fluffy. 3) All veggies (just 1-2) must be cooked or/and dry.

BASIC INGREDIENTS FOR ALL OPTIONS HERE:

1 deep dish frozen pie crust, thawed
2 large eggs
1 cup of whole milk or cream or mix
salt and pepper
Beat together well, with spices

HAM AND ASPARAGUS QUICHE

½ diced red onion
½ pound chopped steamed asparagus
1 diced ham steak
 2 cups Swiss cheese, grated, sprinkled on top

GOAT CHEESE AND GREENS

1 ½   cups tiny cubes of goat cheese log k. Cut with dental floss.
1 cup of wilted squeezed chopped spinach.

QUICHE LORRAINE

6-8 slices crispy bacon chopped
2 diced and sautéed shallots
1 cup small cubes of Gruyère cheese.

MUSHROOM QUICHE

16 oz. brown mushrooms, sliced
1/2 diced yellow onion
2 minced garlic cloves, all sautéed
1½ tsp. thyme
2 cups Gruyère cheese, or crumbled goat feta. (add basil)
Add colour with a touch of shredded carrot on top.
Parmesan optional

PROSCIUTTO CHEDDAR QUICHE

1 cup diced prosciutto
2 cups sharp cheddar cheese shredded
4 green onions, chopped

For all quiches: arrange ingredients evenly around the pan. Gently pour in milk/egg. Bake on a pan at 350. 30 -40 min.
