Za'atar Chicken & Easy Niçoise Salad
Za'atar Chicken
Ingredients
1/4 cup za'atar seasoning
1/4 cup olive oil
3 tsp dried oregano
1 tsp salt
1/2 tsp ground cumin
1/2 tsp ground turmeric
3 pounds bone-in chicken thighs
1 cup pimiento-stuffed olives
1/2 cup dried apricots
1/2 cup pitted dried plums (prunes)
1/4 cup water
Hot cooked basmati rice, optional
Instructions
In a large bowl, combine the first 6 ingredients. Add chicken; toss to coat.
Arrange olives, apricots and plums on the bottom of a 4- or 5-quart slow cooker. Add 1/4 cup water; top with chicken. Cook, covered, on low until chicken is tender, 5-6 hours, serve with rice.

Easy Niçoise Salad
Ingredients
2 cups mixed greens
6 oz green beans
3 soft-boiled eggs
6 small garlic boiled potatoes
6 oz oil-packed tin fish like smoked tuna or salmon
1 cup mixed olives
½ cup cherry tomatoes
2 small cucumbers, cut into small pieces
2 tbs fresh basil, roughly chopped
1 tsp smoked paprika
1/2 tsp salt
3 garlic cloves
1 tsp fresh cracked black pepper
Lemon Dressing
5 tbs lemon juice
6 tbs olive oil
1 tsp Dijon mustard
1 tsp honey
½ tsp salt
2 tbsp fresh chives
Instructions
Bring a small pot of water to a rapid boil. Add green beans and blanch for 2 minutes. Drain and allow to cool completely.
Boil potatoes with garlic cloves, drain and sprinkle with paprika, salt and fresh cracked pepper.
In a small bowl mix together all ingredients for lemon dressing.
On a large platter arrange mixed greens. Top with potatoes, olives, tomatoes, cucumbers, eggs, green beans and fish. Drizzle with dressing and top with fresh basil.
