Mother's Day Meal Ideas

Breakfast: 
Recipe is for 1, multiply for family size      

Luxury Croissant

1 croissant
5 fresh sliced strawberries w/sugar 
¼ cup chopped pecans, toasted
Whipped cream

Optional: Nutella, sliced almonds, maple syrup.

Slice the strawberries. In a bowl,  gently stir in a touch of sugar. Cut the croissant fill whipped cream inside, add berries. Include Nutella and nuts inside, or spread/sprinkle on top.


Dinner:

Easy Baked Pesto Chicken

 4 boneless, skinless chicken breasts
Salt and pepper (to taste)
 ½ cup basil pesto
½ cup grated mozzarella - or more if you like it cheesy!

Preheat oven to 375 F /190 C. Wash chicken, remove excess fat, and slice each breast lengthwise into 2 – 3 pieces.

Oil bottom of  9x12 pan, then spread half of pesto all over the bottom of the dish. Lay chicken in pan, Spread remainder of pesto over the chicken.

Cover with foil, Bake 25-30 minutes just until chicken is barely firm and cooked through. Remove foil, and sprinkle with grated mozzarella cheese. Bake for 5 minutes, or until cheese is melted. Switch oven to broil and bake for another 5 minutes until cheese is lightly golden brown.
