WHIPPED CHOCOLATE RICOTTA (SERVES 2 – 3 EASILY DOUBLED)
½ cup ricotta cheese
1 Tbsp. unsweetened cocoa powder
sweetener to taste : honey, maple syrup, sugar, or stevia,( 1 tsp.) swerve, (keto friendly)
Chocolate bar or baking chocolate, grated.
Optional: liqueur, brandy or just vanilla
Optional add-ins: crushed granola, Coffee Crisp or KitKat, k Oreo crumbs. Increase protein content:add 1 tsp. ground almond
Optional topping ideas: Fresh fruit, whipping cream, nuts, seasonal sprinkles, chocolate chips.
Combine the ricotta cheese, cocoa powder, and sweeter (to taste) in a bowl. Beat or stir together for about 2-4 minutes. Add liqueur, brandy or vanilla and ground almond at this time, if using.
Stir in add-ins. Add toppings. Eat!
Notes: Using a blender will create a more mousse-like dessert.
Refrigeration before serving creates a more solidified pudding effect.
