Peach & Blueberry Cobbler and Shrimp Chow Mein

Peach and Blueberry Cobbler

 

Ingredients

3/4 cup butter cubed*
1 1/2 cups flour*
1 1/2 cups granulated sugar*
3 tsp baking powder
1/4 tsp salt
1 1/4 cups milk
1/2 tsp vanilla extract
3 cups fresh peach slices*
1 cup fresh blueberries*
2 tsp lemon juice
1/2 cup brown sugar

Instructions

Preheat the oven to 350 F.
Add the cubed butter to a 9 x 13 inch baking dish or pan.
Place the dish in the oven for a few minutes until the butter is melted.
Meanwhile, in a medium bowl, combine the flour, granulated sugar, baking powder, and salt.
Add the milk and vanilla extract and stir until smooth.
Pour the batter evenly over the melted butter in the pan (do not stir!).
The melted butter will rise over the batter.
Toss the peach slices and blueberries with the lemon juice and spread them evenly over the batter (again, do not stir).
Sprinkle the brown sugar evenly over the top and and bake 40-50 minutes until the top is golden brown. Serve with your favourite ice cream.

Shrimp Chow Mien

 Ingredients

1 pound shrimp, peeled and deveined *
2 tbsp vegetable oil
1 cup cabbage, thinly sliced
1/2 cup red cabbage, thinly sliced
1 cup celery, thinly sliced
1 carrot, thinly sliced
2 cloves garlic, minced
2 tbsp sweet soy sauce*
2 tbsp low sodium soy sauce*
4 tbsp oyster sauce
1 cup water
12 ounces chow mein noodles*
6 ounces bean sprouts
sesame seeds for garnish

Instructions

Heat a large pan or wok on high heat with the oil and cook the shrimp for one minute on each side then remove the shrimp from the pan and add in the cabbage, red cabbage, celery, and carrots.
Cook 2-3 minutes until wilted, add the garlic and cook for an additional 30 seconds.
Add the soy sauce, sweet soy sauce, oyster sauce and water and bring to a boil for 1 minute.
Add in the pasta, bean sprouts and shrimp and toss to coat.
