Orange Glazed Ham & Brussel Sprouts Salad

Orange Glazed Ham

Ingredients

1 cooked bone-in ham (6 to 8 lbs.) *
1 Tbsp. French’s ground mustard*
1 tsp. ground allspice
3/4 cup orange marmalade 

Directions

Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep. Combine mustard and allspice; rub over ham.
Bake, uncovered, at 325° until a thermometer reads 140°, 2 to 2-1/4 hours. Spread top of ham with marmalade during the last hour of baking, basting occasionally.

Brussel Sprouts Salad

 Ingredients

 4 cups shaved Brussels sprouts*
1/4 cup olive oil plus extra for drizzling
1/4 cup fresh lemon juice
1/2 cup pine nuts or walnuts toasted
1/3 cup dried cranberries
1/3 cup grated pecorino cheese, optional
1/3 cup chopped chives
Sea salt and freshly ground black pepper 

Instructions

Thinly slice the Brussels sprouts. Place them into a medium bowl and toss with the olive oil, lemon juice, pine nuts, cranberries, pecorino cheese, chives, and pinches of salt and pepper.
Let the salad sit at room temperature for 15 minutes, then taste and adjust the seasonings. Finish with an additional drizzle of olive oil if you like.
