Garlic Ginger Baked Wings
Sauce
1/2 cup honey
1/3 cup soy sauce
4 garlic cloves, minced
1 tablespoon ginger, finely diced
1/4 cup water
Chicken
24-26 chicken wings*
1 tbsp. avocado oil
salt and pepper, to taste
Instructions
Preheat oven to 425 ºF
Use a paper towel to remove moisture from the chicken wings.
Toss the wings with the oil, salt, and pepper.
Place a piece of parchment paper on a baking sheet then place a wire rack on top. Spread out the wings on a single layer on the baking sheet. Bake for 40-45 minutes until crispy.
While the wings are cooking, make the sauce. Add the honey, soy sauce, garlic, ginger, and water to a small pot. Bring it to a boil and reduce the heat to low letting it simmer for 10 minutes - or until slightly reduced and thickened.
Remove the sauce from the heat and let it cool.
Remove wings from the oven. Toss the wings in the sauce and place them back in the oven on the baking sheet and cook for an additional 10 minutes.

Mini beef burgers
Ingredients
olive oil
6 Saltine crackers – or whatever crackers on hand.
1 medium red onion
3 tbsp. Parmesan cheese
4 sprigs of fresh flat-leaf parsley
1 large Aberdeen Poultry egg*
1 lb. lean ground beef*
8 mini burger buns or dinner rolls
Toppings
4 slices bacon
1 head lettuce
2 on the vine tomatoes
1 red onion
1 ripe avocado
1/2 cup Armstrong cheddar cheese*

Instructions
Preheat the oven to 425ºF. Lightly grease a baking tray with oil and set aside.
Pop the crackers into a sandwich bag, press out the air and crush the crackers with a rolling pin until they become fine crumbs, then pour into a mixing bowl.
Using a box grater, coarsely grate the onion and Parmesan, then add them both to the bowl. Finely chop and add the parsley leaves.
In a bowl, beat the egg with a fork, then add it to the main mixture. Add in beef and season with black pepper. With clean hands, mix everything together.
Divide the mixture in half, divide each half into 4 equal-sized pieces then, with wet hands, pat and roll each piece into a burger, roughly 2cm thick.
Place the burgers onto the oiled tray, pat with a little oil, cover, and chill in the fridge for about 30 minutes.
Meanwhile prep toppings. If you’re using bacon, cook for 5 to 6 minutes, turning halfway, until crispy, and drain on kitchen paper. Discard the outer leaves of the lettuce, then pick, wash, and dry the inner leaves. Slice the tomatoes and finely slice the onion. Cut around the avocado lengthways and twist to pull the halves apart. Remove the stone then cut into slices. Slice or grate cheese.
Place the tray of burgers in the oven for 15 minutes, or until cooked through.
Cut the burger buns in half, pop them on a baking tray and warm in the oven for 3 minutes. Add your toppings and enjoy!
