Best Broccoli Salad & Juicy Sticky Oven Barbecue Ribs

Best Broccoli Salad  

Ingredients

1 lb. Broccoli crowns*
3 tbsp. Olive oil
3 tbsp. Kraft mayonnaise*
1½ tbsp. Filsinger’s Apple cider vinegar*
2 tsp. Dijon mustard
1 tsp. Maple syrup or honey
2 Garlic cloves, minced
¼ tsp. Sea salt, more to taste
⅓ cup Red onions, diced
2 cup Dried cranberries 

Smoky Tamari Almonds:

½ cup Almonds
½ cup Pumpkin Seeds
1 tbsp. Tamari
½ tsp. Maple syrup
¼ tsp. Smoked paprika, more to taste 

Instructions

Preheat the oven to 350°F and line a baking sheet with parchment paper.

Chop the broccoli florets into ½-inch pieces and any remaining stems into ¼-inch dice. Peel any woody or course parts from the stem first.

In the bottom of a large bowl, whisk together the olive oil, mayo, apple cider vinegar, mustard, maple syrup, garlic, and salt. Add the broccoli, onions, and cranberries and toss to coat.

Place the almonds and pumpkin seeds on the baking sheet, toss with the tamari, maple syrup, and smoked paprika and spread into a thin layer. Bake 10 to 14 minutes or until golden brown. Remove from the oven and let cool for 5 minutes (they will get crispier as they sit).

Toss the almonds and pumpkin seeds into the salad, reserving a few to sprinkle on top. Season to taste and serve.

Juicy Sticky Oven Barbecue Ribs

 Ingredients

4 lbs. Back pork ribs*
4 tsp. Garlic powder
1 tsp. Onion powder
2 tsp. Paprika
2 tsp. Salt
1 tsp. Cracked black pepper
1/2 tsp. Cumin
1 tsp. Chili or Cayenne powder 
2 tbsp. Olive oil 

Sauce:

2 cups Bull’s Eye barbecue sauce*
3 tbsp. Garlic, minced
2 tbsp. Olive oil
1 tbsp. Worcestershire sauce
1/2 - 1 tbsp. Cayenne pepper (optional for heat)
1 tsp. Salt 

Instructions

Preheat oven to 350°F (180°C). Trim the ribs. And place on a baking sheet. 

Combine garlic powder, onion powder, paprika, salt, pepper, cumin and chili or Cayenne. Sprinkle seasoning over ribs and drizzle with oil. Rub the seasoning all over the ribs. Cover tray with foil and bake for 2 hours.

During the last 5 minutes of cook time, mix sauce ingredients.

Remove ribs from the oven, remove foil and spread the tops of the ribs with the barbecue sauce mixture.

Increase oven temperature to 460°F (240°C). Return ribs to the oven, uncovered, and bake for a further 10 minutes. Change oven settings to broil (or grill) on medium-high heat to lightly char and caramelise the edges (about 6 minutes).

Rest for 10 minutes to allow the juices to recirculate back into the meat before slicing.
