Summer Kick Off Dinner!

Bacon-Wrapped Sonoran Smokie Dog

Ingredients

3 medium tomatoes, diced*
1 medium onion, diced
1/4 cup chopped cilantro
2 limes, juiced
2 avocados, diced*
1/4 cup mayonnaise
1-2 tsp. milk
4 Helmuts Smokies or Hot dogs*
4 slices Rocana bacon
1 can baked beans, drained, and warmed
4 Dempster’s Signature Sausage Buns*

Directions

Preheat the grill to medium high heat.

In a medium bowl, combine the tomatoes, onion, cilantro, and lime juice. Stir in the avocados.

In a small bowl, combine the mayonnaise and milk. Whisk until smooth. If the mixture is too thick, add milk as needed.

Wrap each hot dog or smokie in a strip of bacon; set aside.

Grill the dogs until the bacon is brown and crispy, about 8-10 minutes.

To assemble the hot dogs, scoop the beans evenly into the hot dot dog buns. Add the hot dog and top with the avocado Pico de Gallo and drizzle the mayonnaise on each hot dog. Serve immediately and enjoy!

Homemade Strawberry Lemonade Recipe

Ingredients

1 1/2 cup sugar
9 cups water
1 1/2 cup freshly squeezed lemon juice*
1 1/2 cup Strawberries*

Instructions

In a medium pot add the sugar and 1 cup of water up to a boil over medium-high heat.
Set aside and let it cool.
Squeeze your lemons, saving only the juice.
Using a fork mash the strawberries so they are in small pieces. In a large pitcher, combine the rest of the water, simple syrup, lemon juice, and strawberries.

Serve in a tall glass over ice.

Baked Potato Chips

Ingredients

1 lb. White BC Potatoes*
2 tbsp. Olive oil
2 tsp Salt
1 tsp Pepper

Instructions

Preheat the oven to 200 C/ 390 F. Wash the potatoes well. Slice them as thin as you can. The thinner the slices the crispier the chips. Place them in a bowl and add olive oil, salt, pepper, and any seasoning you want (such as rosemary, lemon, garlic, paprika). Toss them around in the bowl. 

Lightly spray two baking pans with cooking oil. Line the potatoes in a single layer making sure they do not touch to prevent sticking. Bake for about 15 to 20 minutes, turning them over ones at around 10 minutes.

Serve with a side of ketchup or accompanied with the main course.
