Sicilian Spinach Salad
Ingredients
Salad
2 cup fresh spinach*
½ cup Woolrich creamy goat cheese or Saputo Feta, crumbled
¼ cup sun dried tomatoes
1 Tbsp. Trophy pine nuts
Fresh Basil Vinaigrette
⅓ cup Emma olive oil
⅓ cup white wine vinegar or sub white vinegar
1 Tbsp. minced red onion
1 Tbsp. fresh basil
1 small clove minced garlic
½ tsp. salt
¼ tsp. pepper
Instructions
Mix all dressing ingredients until thoroughly blended. Lightly toast pine nuts in pan over medium heat until just golden brown.
Prepare salad by layering ingredients in a salad bowl.
Add dressing and serve.

Tuscan Chicken Pasta
Ingredients
12 oz. Primo spaghetti or angel hair pasta
1 tbsp. Emma extra-virgin olive oil
3 boneless, skinless chicken breasts*
Kosher salt
Freshly ground black pepper
6 slices Rhineland bacon*
5 cloves garlic
2 cups Hunts diced tomatoes
3 cups baby spinach*
½ cup Dairyland heavy cream
⅓ cup freshly grated Saputo Parmesan
Freshly torn basil, for garnish
Instructions
In a large pot of salted boiling water, cook pasta according to package directions. Drain, reserving 1 cup pasta water.
Meanwhile, in a large skillet over medium-high heat, heat oil. Season chicken with salt and pepper and cook until golden, about 7 minutes per side. Let rest 11 minutes, then slice, thinly.
In a separate skillet, cook bacon over medium heat until crispy, 8 minutes. Drain on a paper towel, then chop. Pour off half of fat from skillet.
Add garlic, tomatoes, and spinach to skillet and cook over medium heat until fragrant and slightly wilted, 2 minutes. Season with salt and pepper, then add heavy cream, Parmesan, and 1/2 cup of reserved pasta water. Simmer 5 minutes.
Add cooked pasta and toss until fully coated, then add chicken and bacon and toss until combined. Garnish with basil before serving.
