Leftover Turkey Ideas!

Turkey Pasta Carbonara

Ingredients

12 ounces Primo spaghetti*
6 slices Harvest bacon chopped*
1 cup onion minced
3 teaspoons garlic minced
12-ounces McCormick’s Turkey Gravy
1/2 cup Dairyland heavy cream
1/2 cup Saputo grated parmesan cheese plus more for serving
1/4 teaspoon salt
1/4 teaspoon 
1/2 cup Stahlbush Island Farms peas thawed from frozen*
2 cups cooked turkey diced
2 tablespoons chopped parsley

Directions

Cook the spaghetti in salted boiling water Cook the bacon until browned and crisp. 

Remove the bacon from the pan and drain on paper towels.

Add the onion to the remaining bacon fat in the pan. Cook until softened. Add the garlic and cook for 1 minute.

Add the Turkey Gravy and the cream to the pan. Bring to a simmer.

Cook until just thickened. Stir in the parmesan cheese, salt and pepper.

Drain the pasta. Add the pasta to the gravy sauce along with the turkey, peas and bacon. Toss to combine.

Sprinkle with parsley, then serve.

Turkey Chili

Ingredients

2 teaspoons olive oil
1 yellow onion, chopped
5 garlic cloves, minced
1 medium red bell pepper, chopped*
1 pound leftover turkey, chopped or shredded
4 tablespoons McCormick chili powder 
2 teaspoons Clubhouse ground cumin
1 teaspoon Clubhouse dried oregano
1/4 teaspoon Clubhouse cayenne pepper
1/2 teaspoon salt, plus more to taste
1 (28-ounce) can Unico diced tomatoes* 
1 1/4 cups Pacific Organic chicken broth*
2 (15 oz) cans Unico dark red kidney beans, rinsed and drained
1 (15 oz) can sweet corn, rinsed and drained

For topping: Cracker Barrel Tex Mex*, avocado*, Fresh Is Best tortilla chips, cilantro, Dairyland sour cream

Directions

Place oil in a large pot and place over medium high heat. Add in onion, garlic and red pepper and sauté for 9 minutes, stirring frequently. 

Add in turkey and break up the meat; cooking until warmed through. Next add in chili powder, cumin, oregano, cayenne pepper and salt; stir for about 1 minute.

Next add in tomatoes, chicken broth, kidney beans and corn. Bring to a boil, then reduce heat and simmer for 30-45 minutes or until chili thickens and flavors come together. Taste and adjust seasonings and salt as necessary.
